I climb out at around 100 MPH and I base that on optimal CHT cooling vs terrain vs ambient temprature vs gross weight etc.
Right after lift off I might use 80 MPH with 1st notch of flaps until clear of obstacles.

I used to be based at a 1,200 MSL grass strip surrounded by tall trees with hills at both ends. I experimented with various takeoff and landing techniques and flap settings. Flaps at 40 degrees gave me the shortest takeoff and best angle of climb to get above the terrain and trees at about 70 mph. The 40 degree flap setting produces about equal amount of lift and drag. Then I would raise the flaps in steps, reduce power to 2400 RPM and 24" MP and climb out at 90 mph for engine cooling. This worked well in the Idaho back country as well. The published Vx in the MX-7-180 flight manual is 78 mph with 24 degrees flaps. Vy is 94 mph with flaps at 0 degrees. Canyon cruising speed of 70 mph with 24 degrees flaps was what I used in Idaho. As others have said, modifications can affect those numbers.
